A colorful vegetable dish that highlights the natural flavors of broccoli, cauliflower, carrots, and herbs. The unsalted vegetable broth adds a savory note without any additional salt taste.

Ingredients for 4 people

  • 1 small broccoli

  • 1 small purple cauliflower (alternatively regular cauliflower)

  • 1 small white cauliflower

  • 8–10 small carrots

  • 2 tbsp olive oil

  • 2 tsp unsalted organic vegetable broth

  • ½ tsp black pepper

  • 1 tsp lemon juice

  • Fresh herbs or basil for garnish

    Preparation

  1. Preheat the oven to 200 °C top/bottom heat.

2. Cut the broccoli and cauliflower into bite-sized florets. Wash the carrots thoroughly and leave them whole or halve them, depending on their size.

3. Mix the vegetables in a large bowl with olive oil, unsalted organic vegetable broth, pepper, and lemon juice.

4. Spread everything on a baking sheet lined with parchment paper and bake for about 25–30 minutes, until the vegetables are lightly browned and still firm to the bite.

5. Arrange the oven-roasted vegetables on a platter and garnish with fresh herbs or basil.

Creamy Vegetable Risotto with Salt-Free Organic Vegetable Broth

An aromatic risotto where the natural flavors of vegetables and herbs take center stage. Perfect as a main dish or as a side for fish, meat, or roasted vegetables.

Ingredients for 4 people

  • 300 g risotto rice (e.g., Arborio)

  • 1 onion, finely diced

  • 2 tbsp olive oil

  • 1 liter water

  • 3 tbsp salt-free organic vegetable broth

  • 150 g mushrooms, sliced

  • 100 g peas (fresh or frozen)

  • 50 g Parmesan, grated (optional)

  • 1 tbsp butter or plant-based alternative

  • Freshly ground pepper

  • Fresh parsley for garnish

Preparation

  1. Heat the water and dissolve the vegetable broth in it. Keep warm.

  2. Heat olive oil in a pot and sauté the onion until it becomes translucent. Add the mushrooms and fry for a few minutes.

  3. Add the risotto rice and sauté while stirring for 1–2 minutes, until the grains become slightly translucent.

  4. Add a ladle of the warm vegetable broth and let it cook in while stirring regularly.

  5. Gradually add more broth. Only add the next ladle when the liquid has been absorbed.

  6. After about 15 minutes, stir in the peas and continue cooking.

  7. After a total of 18–20 minutes, the risotto should be creamy and the rice still slightly firm to the bite.

  8. Remove from heat, stir in butter and Parmesan, and season with pepper.

  9. Sprinkle with fresh parsley and serve immediately.
