Preparation

Red cabbage shot
Mix 1 teaspoon of powder with 100 ml of water or vegetable juice and enjoy immediately – a quick health boost for between meals.

Smoothie upgrade
Blend a green or fruity smoothie and add 1 teaspoon of red cabbage powder. It adds a subtle umami flavor and supports your gut flora at the same time.

Salad dressing
Mix 1 teaspoon of powder with olive oil, lemon juice, a little mustard, and spices – and you have a probiotic dressing that enhances any salad.

Recipe idea: Sweet potato ragout with fermented red cabbage powder, sour cream, and baked sweet potato skins

Recipe for 4 people · Preparation time: approx. 25 minutes

Ingredients:

  • 800 g sweet potatoes

  • 100 g onion (= 1 medium-sized)

  • 200 g red bell pepper (= 1 large)

  • 15 g garlic (= approx. 3 cloves)

  • 50 g arugula (= 2 handfuls)

  • 100 g sour cream (18% fat)

  • 1 g chili (= ½ small fresh chili pepper or ½ tsp chili flakes or ½ tsp chili powder)

  • 100 ml vegetable broth

  • 40 ml canola oil (= 3 tbsp)

  • 8 g ground cumin (= 2 level tsp)

  • 6 g fermented red cabbage powder (= 2 level tsp)

  • 2 g lemon zest (= 1 level tsp) or 1 dash of lemon juice

  • Salt and pepper from the mill

  • Canola oil for frying the sweet potato skins

1. Peel the sweet potatoes lengthwise with a vegetable peeler to create wide strips of skin. Set the skins aside. Cut the flesh into 2 cm cubes.

2. Peel the onion and cut into 0.4 cm cubes. Cut the bell pepper into 0.5 cm cubes. Finely chop the garlic. Wash the arugula, spin dry, and cut into strips.

3. Heat a large pot (approx. 3 l). Add 2 tbsp canola oil. Sauté the sweet potato cubes with the onions for about 3 minutes. Add the bell pepper cubes and garlic and sauté briefly.

4. Deglaze with vegetable stock and cook for 4–5 minutes. The sweet potato cubes should still be al dente. Add chili (fresh, flakes, or powder) and cumin and cook for 1 minute.

5. Mix sour cream with lemon zest or lemon juice, red cabbage powder, pepper, and salt if needed.

6. Fry the sweet potato skins in hot rapeseed oil until golden brown. Drain on paper towels and lightly salt.

7. Fold the arugula into the ragout. If necessary, season again with salt and pepper.

Recipe idea: Red cabbage smoothie with fermented red cabbage powder

Recipe for 4 people · Preparation time: approx. 15 minutes

Ingredients:

  • 150 g red cabbage (finely sliced or cut into thin strips)

  • 80 g cucumber (= approx. ¼ cucumber)

  • 100 g banana (= 1 piece)

  • 150 g apple (= 1 piece, medium-sized)

  • 120 g orange (= 1 piece, peeled)

  • 15 g ginger (= approx. 1 walnut-sized piece)

  • 20 ml walnut oil (= approx. 1 ½ tbsp)

  • 2 g fermented red cabbage powder (= approx. ½ tsp)

  • 10 g honey (= approx. 1 tsp)

  • As desired: cold water or crushed ice

1. Finely slice the red cabbage or chop it thinly with a sharp knife – this will make it easier to blend in the mixer.

2. Cut the cucumber into bite-sized pieces.

3. Core and dice the apple. Peel and roughly chop the banana and orange.

4. Peel the ginger and cut into small pieces.

5. Place everything in a blender with the walnut oil, red cabbage powder, and honey. Add water or crushed ice to taste and blend until smooth and creamy.
