Preparation

Cold dishes & salads

Black cumin oil develops its full aromatic flavour best when cold. Use it in salads, bowls or dips to add nutty, spicy notes and valuable fatty acids.

Hot dishes & refining

The oil can be used to refine dishes after cooking – e.g. soups, vegetable stir-fries or oriental dishes. This preserves the full aroma.

Recipe idea: Oriental chickpea and bulgur salad with black cumin oil

Ingredients (for 2–3 servings)

  • 100 g bulgur

  • 150 g chickpeas (cooked or from a tin)

  • 1 small red pepper

  • 1/2 cucumber

  • 1 small red onion

  • 2–3 tbsp black cumin oil

  • 1 tbsp lemon juice

  • 1 tsp honey or maple syrup

  • Salt & pepper to taste

  • Fresh parsley and mint, chopped

  • Optional: roasted pine nuts or pumpkin seeds

  1. Soak the bulgur in salted water according to the package instructions and allow to cool.

  2. Cut the pepper, cucumber and onion into small cubes. Finely chop the parsley and mint.

  3. Mix the black cumin oil, lemon juice, honey, salt and pepper in a small bowl.

  4. Combine the bulgur, chickpeas, vegetables and herbs in a bowl. Pour the dressing over the mixture and fold in gently.

  5. Optionally, sprinkle with roasted pine nuts or pumpkin seeds. Serve immediately or leave to stand for a short time to allow the flavours to blend.

Tip: The black cumin oil should only be added just before serving so that the nutty, spicy flavour is fully preserved.
