Recipe Idea: Protein Crispbread with Hummus & Roasted Vegetables

A hearty, nutrient-rich recipe packed with flavor and a crispy texture—perfect as a light lunch or healthy snack.

Ingredients (2 servings)

  • 4 slices of protein crispbread

  • 1 small zucchini

  • 1 bell pepper

  • 1 small red onion

  • 2 tbsp olive oil

  • ½ tsp paprika

  • Salt and pepper

  • 3–4 tbsp hummus

  • a handful of arugula or baby spinach

  • optional: sesame or sunflower seeds

Preparation

  1. Cut the zucchini, bell pepper, and onion into small pieces.

  2. Toss the vegetables with olive oil, paprika, salt, and pepper.

  3. Place on a baking sheet and roast in the oven at 200 °C for about 15–20 minutes, until the vegetables are tender and lightly browned.

  4. Place the slices of crispbread on a plate.

  5. Spread hummus on each slice.

  6. Divide the warm roasted vegetables among the slices of bread.

  7. Top with arugula and, if desired, sesame or sunflower seeds.
