Ingredients:

  • 120 g quinoa (cooked)

  • 1 jar chickpeas (rinsed)

  • 1 zucchini, grilled in slices

  • 1 small eggplant, grilled in cubes

  • 100 g cherry tomatoes, halved

  • 1 avocado, sliced

  • 3 tbsp Organic Mezze Dip Honey & Garlic

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Fresh herbs (parsley or coriander)

  • Salt & pepper

Preparation:

  1. Cook quinoa according to package instructions and let cool slightly.

  2. Grill zucchini and eggplant in a pan or on the grill until golden brown.
